Meadow - White Vermouth - Vault Aperitivo
Vault Aperitivo is a modern aperitivo distillery specialising in vermouth and botanical aperitif-led spirits.
Initially Vault (previously known as Vault Vermouth) was inspired by Dan and Sharon Joines’ trips across Europe and their love for aperitivo and the aperitif. Now in early 2022, they joined forces with Maire and Max Chater - now Vault Aperitivo; bringing. a new chapter, new name and new range of products.
Verdict?
Meadow - White Vermouth
This one was my favourite. It is very floral and carefully hand blended in small batches with key botanicals such as lemon verbena, liquorice root and meadow hay. Then blended with English wine, fresh foraged herbs and flowers including thyme, meadowsweet and dandelion.
I loved this neat just on the rocks; but you could also have this with tonic. It reminds me of summer in a glass. It’s not too sweet; perfectly balanced and one of those drinks where you don’t realise how tipsy you have become as it’s just so easy to drink.
Forest - Red Vermouth
This one was Mike’s favourite. It is a bittersweet red vermouth, made from a blend of botanicals including rhubarb root, orange and woodworm. Then blended with English wine and fresh foraged botanicals including nettle, pine and rosemary.
This one was great in a negroni!
